FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular, to fish mince products manufacture. The composition contains mince including that containing fat in an amount of no less than 8%, a structure-forming agent, flavouring additives, vegetable oil, culinary salt and a binding substance. The binding substance is represented by edible albumin, food fibres produced from red algae, pickled vegetables and water. The structure-forming agent is represented by powder of sodium alginate or kappa-carrageenan or their mixture at an equal ratio. All the components are used at the specified ratio.EFFECT: invention ensures manufacture of macrourus meat food products with good rheological and organoleptic properties.1 tbl
