The present invention relates to a method for preparing organic hand-stretched udon dried noodles and hand-stretched udon dried noodles prepared thereby. The hand-stretched udon dried noodles are prepared through an aging process of eight steps and a stretching process of a plurality of steps, thereby having soft texture and excellent elasticity. In addition, udon noodle stripes having unique elasticity in udon noodles and having good digestive properties without an off-flavor of wheat powder may be prepared. In addition, since a moisture content is low to be easily stored and only a 100% organic raw material is used for preparing udon dried noodles, safe and reliable food may be prepared.;COPYRIGHT KIPO 2016
