The present invention relates to a Lactobacillus plantarum MBE / L2990 strain having excellent alpha-lamnosidase enzyme activity and having an activity of bioconverting ginsenosides Re and Rb1 to ginsenosides Rg1 and Rg5, and uses thereof. The Lactobacillus plantarum MBE / L2990 (KCTC18529P) strain according to the present invention is food safe and has an excellent ability to bioconvert ginsenosides Re and Rb1 contained in ginseng to ginsenosides Rg1 and Rg5. Therefore, using the Lactobacillus plantarum MBE / L2990 (KCTC18529P) strain according to the present invention, it is possible to produce fermented ginseng or red ginseng with a relatively increased Rg1 and Rg5 content, which is very useful in related industries.
