This article discusses 'Tropical Pretzels', a frozen, soft, multigrain pretzel product filled with dried pineapple, mango and walnuts, which won the 2008 AACC (American Association of Cereal Chemists) International Student Division product development competition. The product is designed to be convenient and healthy, and to have good flavour. Pretzels as a snack food, the growing trend in healthier bakery products, and formulation, processing, shelf life, potential distribution channels, sensory properties and future of 'Tropical Pretzels' are considered.
