IN THIS STUDY AN AMPLE BIBLIOGRAPHIC REVIEW WAS CARRIED OUT ON GRAPE SEED OIL, EMPHASISING ASPECTS RELATED TO CHEMICAL COMPOSITION AND EXTRACTION METHODS. THE AIM WAS TO DETERMINE WHETHER GRAPE SEED OIL COULD BE USED AS AN ALTERNATIVE TO CONVENTIONAL EDIBLE VEGETABLE OILS (SUCH AS SUNFLOWER, SOY, ETC). AS REGARDS COMPOSITION, GRAPE SEED OIL HAD A HIGH CONTENT OF LINOLEIC ACID AND TOCOPHEROLS AND A LOW CONTENT OF LINOLENIC ACID, SATURATED FATTY ACIDS AND CHOLESTEROL. THE MOST COMMON METHODS TO EXTRACT OIL FROM GRAPE SEED ARE PRESSURE SYSTEMS, EXTRACTION WITH ORGANIC SOLVENTS, AQUEOUS EXTRACTION, ENZYMATIC HYDROLYSIS (COMBINED WITH THE ABOVE METHODS) AND SUPERCRITICAL CARBON DIOXIDE EXTRACTION.
