Food trucks, those vans with walk-up windows where you can grab a quick meal cooked right onboard, are not a new phenomenon. They have been around for a long time in one form or another. However, they have seen a national resurgence in recent years, in part fueled by the restaurant downturn during the Great Recession of 2007-2008. In 2008, the Kogi BBQ food truck in Los Angeles gained national attention for its gourmet fare. The industry has enjoyed significant growth throughout the economic recovery since the recession. It is projected that food trucks will be a $2.7-billion industry by 2017, growing at more than 8% a year.
