Another successful icewine harvest

If the Canadian wine industry bad a cash crop, it would be icewine which is often picked the same year it is-sold, although it is always dated by the crop year. A split (a bottle half the size of the standard 750 ml wine bottle) sells for about 50 dollar and offers wineries a quick return on the time, and considerable effort and risk, that goes into making it. This dessert wine is made from grapes left to freeze on the vine and pressed in the cold so that the water in the grape remains frozen. Because of this, the essence of the grape — the natural sugar and acid — is retained.
