This article discusses the challenges associated with research, development and commercialization of innovative food processing techniques. Aspects considered include: process uniformity; process efficacy for microbial populations and enzymes; process impact on product structure and/or functionality; opportunities for combining processes; value-added impacts of innovative technologies; and education and communication.
