AS IN MANY Asian countries, pork is the number one meat in Vietnam. This is hardly surprising as virtually everyone living in the countryside keeps a few pigs. The sow population for Vietnam is reckoned to be around four million, although 50 per cent of that figure are 'backyard' animals, so that figure will tend to fluctuate.
