Food safety keeps grabbing headlines. And, those headlines have increased consumer concerns about food safety, which ranked fourth in importance behind crime prevention, safe drinking water and health/education, according to a 1996 survey conducted byCMF&Z Public Relations, Des Moines, IA. Until now, the big emphasis has been the Hazard Analysis and Critical Control Points (HACCP) that identify specific hazards and preventive control measures in the packing and processing segment. But recently, emphasis has widened to include the whole chain from ranch to consumer. After all, everyone has a stake in being sure food is handled and prepared safely.
