A few years back, I published an article in BEEF entitled "The Curse Of Quality Grade," Several inadequacies of our grading system were pointed out, including tenderness issues, Publication coincided with the National Cattlemen's Association convention and was intended to bring about change. The article did, in fact, become a point of discussion among the members of the grading committee. Shortly thereafter, I was aware that changes would be made concerning the "B" maturity designation, My intuitivebelief was that B maturity would not be allowed to enter Choice. Recently, I was shocked to learn these cattle won't even be allowed in the Select grade. They'll be graded as Standard.
