摘要

Milk and milk products constitute essential dietary components for a vast majority of the population. Traditional dairy products require low capital investment and give high profit margin. They are more appealing to the Indian palate. Dahi is the mostpopular traditional fermented milk product in India. Dahi has better digestibility than fresh milk and can be consumed by people who suffer from lactose intolerance (Aneja, 1995). The Indian consumers have been well aware of its therapeutic value in diseases of the gastro intestinal tract. Dahi contains more protein, calcium and other nutrients than milk, reflecting extra SNF contents.
