Lysozymes from a biochemical point of view

Some lysozymes are listed, and an account is given of their sources and various uses, including: in cheesemaking, as food additives, for their antimicrobial properties and for the diagnosis of leukaemia. The interactions of lysozymes with anionic biomolecules are also considered.
