Investigations of official samples of fishery products, especially smoked salmon, from Lower Saxony from the years 1998 to 2001 show high percentages of qualitative isolations of Listeria monocytogenes (L. m.). In 1999 42 % and in 2000 56 % of smoked salmon were contaminated with L. m., in 2000 6 to 8 % of the samples were contaminated with 10(3) to 10(4) L. m./g. A correlation between the microbial flora (total viable count, Enterobacteriaceae, Lactobacillaceae) and L. m.-contamination could not be found. Lack of microbial hurdles results in an increase of L. m. up to the eat-by date with the possibility of risk to consumer health. The growth of L. m. is possibly related to changes of production technology. Some possibilities to improve the situation are discussed.
