SUMMERTIME AND THE cooking is easy if you have ice cream in the freezer and a supply of toppings in the refrigerator. Many times we enjoy cooking out for the main course of a meal, and guests, or the family, enjoy the process of preparation. Dessert is a bit different. Baking a pie, cake or pastries can detract from the spontaneity of the occasion. Just a dish of ice cream seems too ordinary, but if you top it with something special it makes a fitting—and delicious—dessert. Take a look at some of these tasteful treasures that you can make ahead and store in the refrigerator. Some will even store successfully for weeks. All are good with ice cream; most will also top pound cake or angel cake, readily available at local supermarkets. Those that need reheating after refrigeration are most conveniently stored in a container that will withstand a microwave, so don't use plastic.
