Home cheesemaking is an increasingly popular activity. Maturing cheeses usually requires an environment in which temperature and humidity are controlled. In the past this was achieved in caves in which the temperature and humidity were ideally suited to cheese maturation. For the amateur cheesemaker, the ideal temperature is achieved most conveniently by using a wine fridge in which cheeses can be placed and held at 10-13°C.
