Annual variation in the max. viscosity (MV) of wheat flour was investigated and the relationship between MV and rainfall during the ripening period was studied in order to establish cultivation techniques for producing good quality wheat with a high, stable MV in any growth environment. MV of flour varied considerably with year, sowing time and cultivar, but was mainly affected by rainfall during the late ripening stage, 1-15 days before the maturity stage; rainfall 5-6 days before the maturity stage had a particularly marked effect. Regardless of year and sowing time, flour from cv. Iwainodaichi had a higher, more stable MV than that from cv. Chikugoizumi. Results indicate that improved tolerance to rain damage during the late ripening stage is most important for the stable production of wheat with high MV. It is concluded that good quality wheat with high, stable MV may be produced by selection of cultivars whose quality is little damaged by rainfall during the late ripening stage, and by early sowing that allows harvest in May, a month with little rainfall.
