The California processing tomato industry began in 1859, when Francis Cutting commercially processed tomatoes in San Francisco using Mason fruit jars. By 1862, the tin canister, imported from Baltimore, had replaced the Mason jars. The tomatoes were hand packed into tin cans through a hole in the lid. The hole was then capped with tin plate, solderedby hand and sterilized in boiling water. The first major canning tomato variety was the Santa Clara Canner. It originated in Italy and was still the dominant California variety in 1916. It had an indeterminate vine and round tomatoes averaging 8-10 ounces.
