Estimation of environmental effect and genetic parameters for the carcass traits in Hanwoo (Korean cattle).

This study was conducted to estimate the genetic parameters for carcass traits of Hanwoo cattle breed using Animal Products Grading Service's data of 428 812 cattle from 101 slaughterhouses nationwide between 2000 and 2005. Carcass weight, eye muscle area, backfat thickness, marbling score, meat colour and fat colour which significantly influenced Hanwoo's grade, effects of carcass year, carcass season, sex and carcass region were estimated. Based on carcass traits of carcass weight, eye muscle area, backfat thickness, marbling score and meat colour that greatly influenced the Hanwoo's grade, heritabilities and genetic parameters were estimated in 17 578 Hanwoo slaughtered in 2005 with existing herdbook, where EM-REML algorithm was used in estimating genetic parameters. The mean and standard deviation of each carcass trait were 321.42+or-53.62 kg, 76.25+or-10.43 cm2, 9.96+or-4.14 mm, 3.75+or-2.00, 4.83+or-0.48 and 2.99+or-0.40 for carcass weight, eye muscle area, backfat thickness, marbling score, meat colour and fat color, respectively. The effects of carcass year, carcass weight, backfat thickness and meat colour were 359.40+or-0.181, 9.82+or-0.017 and 4.90+or-0.002, respectively, 2004, and were considered as the highest values. It was observed that the effects of carcass season, carcass weight and eye muscle area were highest in spring at 345.88+or-0.144 and 79.57+or-0.033, respectively, and the backfat thickness was highest in winter 8.78+or-0.013. Meat colour and fat colour slightly higher during fall at 4.88+or-0.002 and 2.96+or-0.001, respectively, while marbling score was highest in summer 3.29+or-0.006. The results of the analysis on the effects of sex indicated that the backfat thickness and fat colour were highest in cows at 10.53+or-0.010 and 3.07+or-0.001, respectively, the carcass weight was highest in Hanwoo steer at 368.03+or-0.068 kg, eye muscle area were highest at 82.96+or-0.042 in bull, and the marbling score was highest at 4.19+or-0.007 in steer, and meat colour was highest at 4.89+or-0.001 in cow. The carcass weight, eye muscle area, fat colour were highly significant in Hanwoo carcasses slaughtered in Gyeongbuk area at 354.62+or-0.198, 82.09+or-0.044 and 2.98+or-0.002, respectively. Meanwhile, the backfat thickness and marbling score were significantly high in Hanwoo carcasses slaughtered in Gyeongnam area at 9.73+or-0.012 and 3.50+or-0.006, respectively. Majority of carcass traits, were significantly different based on the region where the cows were slaughtered. The carcass weight, eye muscle area and backfat thickness were low at 0.20, 0.11, 0.12 and 0.13, respectively, based on heritability estimates, while the meat colour had a high heritability at 0.47.
