As far as pork is concerned, quality is not something that is easily defined. It might include appearance, colour, water-holding capacity, succulence, flavour, tenderness and juiciness. It might also include animal welfare and food safety. A man who knows rather more about the subject than most is Professor Jeff Wood, head of the animal sciences division of Bristol University, who has specialised in the subject for over 30 years. He and his team have a reputation for being able to objectively measure aspects of quality that we might have thought were un-measurable.
