The market for poultry in Mexico, as with other countries, has been changing rapidly in recent years. On a recent trip to Mexico, I got a chance to see first hand both the traditional and the emerging markets for poultry. The traditional started with a 5 a.m. visit to the huge Mexico City chicken market. Here, in cover of darkness so early in the morning it feels like the middle of the night, dozens of tractor trailer converge on an open market for chicken. While Bachoco is still the largest company here, the two other dominant players in Mexico, Pilgrim's Pride and Tysons Foods, are also a force. The trucks unload whole birds (some trucks refrigerated, some packed in ice from top to bottom) and sell to independent vendors who cut and package the birds for distribution to shops, open markets and restaurants throughout the Mexico City area.
