摘要

Vegetables and fruits are alive even after harvest, continuing their life activity. This life activ- ity, that is, decomposition of sugar and acid within the plant system through breathing, causes vegetables and fruits to deteriorate in quality. Preventing the decomposition of sugar and acid, therefore, is the key goal of freshness-keeping containers. It can be attained effectively by ex- posing vegetables or fruits to a low-temperature environment.
