Since the days of the Byzantine Empire, Istanbul has been dubbed "city of the world's desire," a tribute to the beauty of its architecture; its enviable geographical situation on the Bosporus, the Golden Horn, and the Sea of Marmara; and not least of all, the opulence of its food culture. Since becoming the capital of the Ottoman Empire around the middle of the 15th century, Istanbul has remained true to its glorious past, retaining many of the elegant pastries and desserts that are a legacy from the confectioners of ancient Persia.
