Everyone is aware of the two most popular methods of generating heat for cooking: chemical [as in a gas stove] and electric. Of course, then there are microwaves, which have no jurisdiction here. But there's also another completely different technology that many great pastry chefs have already embraced, and that's magnetic induction. Induction cooking has been largely overlooked, perhaps simply because people don't know enough about it. The following pages provide an overview of the technology as well as a look at some specific brands and the products they offer.
