餐饮行业从业人员行为优化的探讨

     

摘要

以知信行(KAP)模式理论和认知行为理论为基础,从餐饮行业从业人员的角度出发,并通过问卷调查的形式,了解其在食品安全知识、态度和行为方面的基本情况。通过上述数据,分析(KAP)模型中三个要素两两之间相互的关系和影响从业人员知识、态度、行为的多重因素。从分析中我们得知餐饮类企业从业人员的知识水平处于中等水平,而从业态度和从业行为较标准仍有很大的偏差。本研究通过分析获得餐饮业从业人员食品安全知信行的影响因素,并针对存在的问题提出了相应的解决办法,为以后餐饮业从业人员的卫生知识培训工作提供了参考依据和相关建议。%Based on the KAP model theory and Cognitive behavior theory,this paper find out the basic situation of catering industry practitioners through questionnaires,at the same time analyze the relationship among the three elements in KAP model and find about the multiple factors that affect the knowledge level,attitude,and behavior of the practitioners . By analyzing the data,we can easily find that the knowledge of practitioners can reach the medium level,their work attitude and professional practices are still off the standard. In short,this paper gains the influencing factors of the catering industry practitioner knowledge attitude and practices,and provides possible solutions aiming at the existing problems,offers reference and referring suggestions for training the catering industry practitioners in the future.
