On the basis of the nutritional component evaluation of pitaya fruit, the status of fruit juice processing, dried fruit processing, canned processing, fruit wine brewing, fruit vinegar processing, jam processing,pectin extracting,pigment extracting,other components extracting and fruit peel powder processing in recent years was reviewed in this paper.The development trends of processing and utilization technology of pitaya were put forward.%在分析评价火龙果营养价值基础上,综述火龙果的果汁饮料加工、果脯加工、罐头加工、果酒加工、果醋加工、果酱加工、果胶提取、色素提取、酶的提取、其他成分提取及果皮粉加工等加工利用技术,探讨火龙果的加工利用技术可能发展的方向.
