Using the method of accelerated shelf-life testing predicted the shelf-life of infant rice cereal, through the detection of physicochemical,microbiological and sensory indexes,the shelf-life of carton,plastic, can packaging rice were 20 days when they were put under 50 ℃75 % RH,65 days under 40℃75 % RH, based on the above obtained data,we found the shelf-life of rice cereal at 20℃was 686 d-857 d.%采用储存期加速测试法对婴幼儿米粉的保质期进行预测,通过检测理化、微生物和感官指标,得到了纸盒装、塑罐装、铁听装3种包装形式米粉的保质期在50℃、75 % RH的保质期为20 d,在40℃、75 % RH为65 d,由以上数据得到在20℃下米粉的保质期为686 d~857 d.
