以灵武长枣为试材,在0±0.5℃、相对湿度90%的条件下,研究不同浓度(1%、2%、3%)壳聚糖涂膜处理对灵武长枣保鲜效果的影响。结果表明:壳聚糖涂膜处理对灵武长枣具有一定的保鲜作用,不同浓度的壳聚糖,保鲜效果不同,其中2%壳聚糖涂膜处理对灵武长枣的保鲜效果最佳,在贮藏末期,灵武长枣硬度最大,为11kg/cm2;失重率仅为9%,是对照处理的1/4;可滴定酸含量最高,为1.5%;相对电导率最小,为63%。%Effects of different concentrations (1%, 2%, 3%) of chitosan coating on quality of Lingwu long jujube were investigated at 0±0.5℃ with 90% Relative Humidity in this paper. The results showed that: all the treatments with chitosan coating had preservation effect on Lingwu long jujube, and the 2%concentration of chitosan coating had the best effect on Lingwu long jujube, at the end of storage, which firmness was 11kg/cm2, and weight loss rate of was only 9%. It is titratable acid content was the highest (1.5%), and the relative conduvtivity was the lowest (63%).
