In order to obtainγ-aminobutyric acid from lactic acid bacteria,the ability ofγ-aminobutyric acid production of the 16 strains of lactic acid bacteria isolated from Huangyao Douchi,Guangxi Prov-ince are investigated by using High Performance Liquid Chromatography.The results show that the strain HY15 has better producing ability ofγ-aminobutyric acid.After 48 h of inoculation in MRS me-dium containing 1% (W/W)monosodium glutamate,it can produceγ-aminobutyric acid with the con-centration of 0.161 g/L.Based on morphological characteristics,physiological and biochemical tests, and 16S rDNA sequence analysis,the strain HY15 is identified as Pediococcus pentosaceus.%为从豆豉中获得产γ-氨基丁酸的乳酸菌,采用高效液相色谱法对从广西黄姚豆豉中分离筛选得到的16株乳酸菌的产γ-氨基丁酸能力进行了研究。结果表明:菌株HY15的产γ-氨基丁酸能力较好。该菌株在含1%(W/W)谷氨酸钠的MRS发酵培养基中37℃厌氧培养48 h 后,发酵液中γ-氨基丁酸产量达到0.161 g/L。经形态学特征、生理生化试验和16S rDNA基因鉴定,确定菌株 HY15为戊糖片球菌(Pediococcus pentosaceus)。
