电子舌在烹饪教学与研究中的应用

摘要

电子舌是模仿人类舌头的功能研制出的一种分析仪器。经过多年发展，电子舌已经在诸多领域发挥着越来越重要的作用，但是尚未在烹饪研究领域得到应用。通过电子舌能对不同人用各自配方调制出来的糖醋汁进行主成分分析，证明电子舌对其有很好的识别和区分作用，并对电子舌在烹饪中的发展进行展望。%Smartongue is a kind of analysis instrument to imitate the functions of human tongue.After years of development,smartongue has been playing an increasingly important role in many fields,but it still has not been applied in culinary research field,Smartongue is used for the principal component analysis of sweet and sour sauce made by different people with different formulations,which demon-strates that smartongue has good identification and distinction functions.The development of smart-ongue in cuisine is prospected.
