我国几种特色果酒专用酵母的研究进展

摘要

The screening of special yeasts for characteristic fruit wine is one of the core technologies for the development of fruit wine industry and deep processing of fruit. Based on the results of recent domestic researches in the screening of special yeasts for characteristic fruits, and combined with the current development trend of fruit wine industry, the study on special yeast for main fruits including berry, pome, drupe, citrus fruit and other fruits was summarized. Meanwhile, the problems existing in the current research were discussed to provide reference for the in-depth cultivation of special yeast for characteristic fruit wine.%特色果酒专用酵母的选育是果酒产业发展和水果精深加工的核心技术之一.基于我国科研人员在特色水果专用酵母选育方面的研究结果,结合当前产业发展的趋势,该文总结归纳了浆果、梨果、核果、柑果及其他类水果中主要水果的专用酵母研究情况,并对当前研究中存在的问题进行了讨论,以期为特色果酒专用酵母的深入培育提供参考.
