The present invention relates to a yeast Saccharomyces cerevisiae GBY3 isolated from domestic mulberry and method for producing berry wine using yeast. The method of the present invention comprises the following steps: adjusting sugar content by adding saccharides into a crushed berries and then fermenting the same after inoculation of the yeast of the present invention; and aging the ingredients in a dark and cold area by carrying out juice-extraction, freezing, and filtration after completion of fermentation. According to the present invention, the yeast of the present invention is capable of performing ethanol fermentation with raspberry, mulberry, and wild grapes which are kinds of berries, thereby providing high-quality wine.;COPYRIGHT KIPO 2016
