脉冲强光对连续流动状态下黄酒杀菌效果及品质的影响

         

摘要

In this paper, the effect of flow-through pulsed light on the sterilization and quality of rice wine were investigated. The effect of circular treatment time under 1L/min flow on microbial number, physical and chemical properties and sensory of rice wine were determined and evaluated.The results showed that microorganism in the rice wine could be inactivated by pulsed light. More time of pulsed light treatment could obtain good sterilization The optimal conditions were 1L/min of the wine flow and 3 times treated by pulsed light. Under these conditions, sterilizing efficiency of bacteria, mold and yeast were 87.30%, 68.58%, 81.34%, respectively. The contents of total sugar, total acid, amino-acid nitrogen and β-phenethanol were reduced by 55.52%, 17.76% and 15.72%, respectively, while the content of amino-acid nitrogen was not affected. The results of this study indicated that the pulsed light has great potential application in rice wine preservation.%利用脉冲强光对黄酒中微生物进行杀灭研究,并探讨其对黄酒品质的影响.主要研究了流速为1L/min条件下,脉冲强光循环处理1次、2次、3次时,黄酒中微生物、理化指标及感官的变化情况.结果表明,脉冲强光对黄酒中的微生物有一定的杀灭效果.脉冲强光处理次数越多,杀菌效果越好;在流速1L/min、脉冲强光处理3次时,黄酒中细菌、霉菌、酵母菌的杀菌率分别达到87.30%、68.58%、81.34%,总糖、总酸和β-苯乙醇含量分别降低55.52%、17.76%、15.72%,而对氨基酸态氮含量基本没有影响.本研究表明,脉冲强光对流动状态下黄酒进行杀菌有一定的应用前景.
