介绍了矿物油的来源、理化性质和危害,综述了目前国内外检测的感官分析法、物理分析法、化学分析法、色谱法以及色谱–质谱联用技术等,评价了各自的优缺点,展望了检测方法的发展趋势,以期为粮油检测相关技术的研究提供有益的参考。%The sources of the mineral oil,the physical and chemical properties,and hazards were described. The current domestic and international detection methods,including sensory analysis, physical analysis,chemical analysis,chromatography and chromatography–mass spectrometry technology,were reviewed,and their advantages and disadvantages were evaluated. The development trend of detection method was prospected,in order to provide useful references to the research of the related technology of detecting oils.
