In India almost all the plantation white sugar is produced by double sulphitation process and mostly it is by simultaneous liming and sulphitation, pre liming and simultaneous liming and sulphitation and by shock liming and sulphitation for treating the normal juices being encountered in the industry. But when we are faced with refractory juices and juices from the stale cane, the above processes do not give the desired results. The author has the experience of batch sulphitation where the juices can be treated according to the quality.
