Nowadays the imports cover more than 68% of the seafood consumed, most of which are imported processed and is therefore difficult to identify morphological methods. Often the identification based only on taxonomic markers does not offer sufficient guarantees of security to the consumer with associated risks of commercial replacements and sanitary fraud. It is essential, in the interest of public health, that seafood is safe and properly labeled in fact a Food Standards Agency says that there are highlevels of renamed mislabeled seafood. Ensuring consumer safety by improving and controlling food production is among the primary tasks of the Istituto Zooprofilattico of Genova, an italian health government body that provides a wide range of services for clients from both the public and the private sector.
