摘要

Based on the optimum ultrasonic temperature and time parameters obtained from single-factor experiment, the response surface analysis method is employed to design and optimize the parameters in the experiment. The optimum parameters obtained from response surface analysis are as follows: enzyme additive amount 1.7%, hydrolysis time 3.8h, hydrolysis temperature 56 °C, materials to water rate 1:4, pH 9.3 and total protein extraction rate 95.50±0.44%.
