Malting of barley involves three production stages, which are usually referred to as steeping, germination and kilning. Total water use during these stages amounts to 4 m~3 water/ton barley and is mainly attributed to steeping and the first germination step. The current practice is to use drinking water for the production stages. Due to evaporation losses and water uptake by the barley, around 20% of the total water consumption is no longer available as wastewater. Hence, if the wastewater flows were treated to process water quality, up to 60 or 80% reuse could be obtained and substantial water savings could be achieved.
