Traceability in food products is something that we take for granted and presume to understand. In most cases, it is defined by a paper trail that follows ingredients from point of origin to consumer. Bivalve traceability is a logistic paper trail imposed by governments to ensure consumers that harvested shellfish products are safe to eat. The benefit for a country is both to protect its export position and to limit the health risk for consumers, while for processors it is to have the security and traceability that distributors demand to maintain their markets. Thus, traceability can be viewed largely as a top-down approach, although it is driven by those closest to consumers. The present "obligation to comply" is a chore for growers and processors,bogged down by paperwork and limited resources. This task is not yet perceived as a profitable effort!
