Increased international focus on food safety has led to a focus on the quality of farmed fish. Since safe cultured seafood starts with fish feed, development of fish feeds with low levels of undesirable substances has become pivotal. In farmed salmon,the fat soluble polychlorinated dioxins and furans (PCDDs/Fs), dioxin-like PCBs (DLPCBs), and brominated flame retardants (BFRs) are among one of the greatest challenges with regards to food safety. Fish oils are the main source for these pollutants infarmed fish. The use of vegetable oils, which have a naturally lower level of these undesirables, has the potential to be used in producing a tailor-made seafood that is low in the mentioned undesirables. The congener profile and level of the different persistent organic pollutants (POP) in feed is often not the same as in the cultured fish. Assessment of the feed-to-fish transfer kinetics of the mentioned undesirables in various feed ingredients is essential in understanding the final levels found in farmed fish. The present work will present results on the reduced exposure of PCDDs/Fs, DLPCBs, and BFRs in salmon that have been cultured with diets containing vegetable oils.
