The paper introduces the development of minced fish products and the traditional process, mechanized production process and production technique of making minced fish products from fresh water fish in China. It analyses the existing qualityproblems in processing traditional minced fish products and shows the ways to obtain better quality control. They may include improving and perfecting traditional process, paying more attention to fish rinsing and introducing new process of secondaryheating. only when we are familiar with the key operating instructions and follow them strictly, can we guarantee to produce quality minced fish products.
