摘要

The quality of garlic and its products is usually related to their alliin and SAC content. LTQ-Orbitrap HRMS method for the simultaneous determination of S-allyl-L-cysteine (SAC) and S-allyl-L-cysteine sulfoxide (alliin) in garlic and its derived products was developed and validated. We conducted the method validation including linearity, precision test and recovery. It proved to be sufficient for using the determination method of SAC and alliin in a variety of garlic and its products.
