Health Benefits of Whole Grain Products

Health benefits of wheat bran as related to reduction of cancer risk are well known. Recent research has shown that additional components beyond fiber are present in wheat bran and contribute to suppression of cancer risk. Scientists from two Kansas Universities have joined forces to better understand these compounds. A wide range of antioxidant activity has been observed within a sampling of over 100 specific wheat cultivars. The antioxidant activity has been shown to transfer from diet to the blood of animals and been correlated with colon tumor suppression in model animal systems. Components responsible for the cancer suppression effect may include orthophenolic compounds and lignans. Results will be shown and significance discussed.
