According to wholesome food regulation in Taiwan, every chicken sold in market should be inspected by veterinarian before and after slaughter process. Slaughterhouse is a severe environment and inspection job needs mind concentration which causes inspectors tends to tired. This study applied a hyperspectral (ultraspectral) imaging system to obtain line spectrum at 404-924 nm for wholesome and unwholesome chicken carcasses samples. Among nine region of interest, three of them at upper-left, middle-center, and lower-right portion of carcass were compared in line spectrum. Results of this comparison showed that wholesome samples have no large differences but unwholesome samples have. It is recommended to take line spectrum at middle-center to have stronger signal. Loading plot of PC A (Principal component analysis) suggested that 470-530 nm and 780-810 nm have strong relations to the spectra. The classification error ratio for wholesome and unwholesome samples was 0.0014 for training samples and 0.006for testing samples when 45 scores were used in classification model.
