VOLATILE COMPOUNDS IN SUPERCRITICAL CARBON DIOXIDE EXTRACTS OF BROWN CRAB (CANCER PAGURUS) PROCESSING BY-PRODUCT

Brown crabs (Cancer pagurus) are found in the Eastern Atlantic, from the northern Morocco extending along the Atlantic coast of Europe, to the British Isles and northern Norway and in the north coast of the Mediterranean (Marseille, Napoli, Greece). Brown crabs are heavily exploited commercially and are available throughout the year. The total catch reported for this species in 2006 was 46016 tonnes. By-products generated in the brown crab processing industry comprise as much as 70% of the total crab weight, although only a small amount of these by-products is processed into value-added products.
