The published literature strongly suggests that the iron-tin alloy plays an important role in the corrosion of tinplate in grapefruit juice. Accordingly, an investigation was undertaken to determine the effect of the alloy-coating weight on grapefruit-juice pack performance and on alloy-tin-couple (ATC) current and other special properties of tinplate.The results of this investigation showed that ATC current and iron-solution value (ISV) drop sharply when matte plate is melted. The ATC current continues to decrease as the alloy weight is increased, whereas the ISV does not decrease further with increasing alloy weight. Tin-crystal size generally increases with increasing alloy weight. Lag time is unaffected by alloy-weight variations.Contrary to expectations, pack data show that improved grapefruit-juice pack performance is not obtained by increasing the alloy weight, even though the A TC current is decreased. Similar behaviour would be anticipated in other acid fruit packs.
