Energy efficiency of intermittent drying regimes of carrot

This paper presents the results of an experimental study of convective intermittent drying of carrots (Daucus carota). The experiments have been grouped in three series according to the duration of the heating period: continuous, symmetrical and asymmetrical. Symmetrical intermittent modes consists equal periods of heating and cooling: 2+2, 4+4, 6+6, 8+8, 10+10 min. Asymmetrical intermittent modes with a heating period that is two times longer: 2+1, 4+2, 6+3, 8+4, 10+5 min. The temperature of the air during the heating period for three groups was 70°C. The influence of different duration of heating periods on energy savings has been investigated. There is a significant reduction in the energy consumption (from 30 to 48.6%) for drying compared to the continuous mode for all the experiments from the group of symmetrical regimes.
