摘要

The electrophoregrams of water-soluble, ethanol-soluble and acetic acid-soluble proteins form wheat embryo and endosperm were compared. Significant differences between embryo proteins and endosperm were compared. Significant differences between embryo proteins and endosperm proteins were observe.d The number of protein bands of water-soluble proteins from embryos in the gel was less than that of endosperms. Under the experimental conditions the ethanol solution cannot extract any protoin from embryo according to the electrophoretic result. And acetic acid only extracted few proteins which showed in alpah-zone of the gel. Ethanol-soluble proteins, either from wheat flour or from wheat kernel, gave the same PAGE pattern under acidic PAGE system. This means that electrophoretic analysis of wheat ethanol-soluble and acetic acid-soluble proteins are mainly from endosperm.
