粮食储藏过程中,真菌危害是造成粮食损失的一个主要原因,建立有效的储粮真菌检测技术是解决储粮安全问题的一个有效方法.目前用于储粮真菌检测的技术很多,主要分为直接测定和间接测定两种,直接测定主要指平板菌落计数和真菌孢子直接计数,间接测定涉及到储粮真菌特定结构成分和代谢产物的测定,各种方法均有自身的特点.本文主要综述了目前储粮真菌的检测方法及应用情况,并提出了早期快速检测方法的未来发展趋势.%Fungi are a major cause of spoilage in stored grain,early detection of mould growth is required if remedial action is to be taken and rapid methods are currently being developed to detect the initial stages of spoilage.Now there are many methods mainly divided into direct determination and indirectly measuring two kinds.Each method has its own characteristic.This paper mainly reviews the early detection methods and the applicability of various methods,and put forward early rapid detection method in future development.This paper reviews the early detection technology of spoilage fungi in stored grains.
