PROBIOTIC PREPARATION BASED ON W1/O/W2 TYPE DUAL EMULSION STRUCTURE, AND PREPARATION METHOD THEREFOR AND USE THEREOF

Provided are a probiotic preparation based on a W1/O/W2 type dual emulsion structure, and a preparation method therefor and the use thereof. The preparation method comprises: mixing either a solution containing probiotic bacteria or probiotic bacteria with a probiotic protective agent, then taking the mixture as an inner aqueous phase W1; dissolving an emulsifier in a lipid phase to form a lipid phase O, performing preliminary mixing on the lipid phase O and the inner aqueous phase W1, then stirring, and emulsifying same by means of a low-energy emulsification method or a high-energy emulsification method, so as to obtain a primary emulsion W1/O; and taking a solution containing an emulsifier as an outer aqueous phase W2, adding W2 to the primary emulsion W1/O, stirring, and emulsifying same by means of the low-energy emulsification method or the high-energy emulsification method, so as to obtain a W1/O/W2 type dual emulsion, i.e. the probiotic preparation. A dual emulsion system is used for entrapping probiotics, so that the probiotics can stay alive during a low-temperature storage process and a freezing and thawing process, the impact of the external environment on the probiotics can be reduced, and the storage stability and the freezing and thawing stability of the probiotics within the shelf life of a product can be improved.
